Gazpacho

For two servings you will need:
- 2 medium soft tomatoes
- 'The twist': an avocado, best diced in cubes and frozen beforehand - 2 slices of wholegrain bread
- A clove of garlic
- A tablespoon balsamic vinegar
- A squeeze of lemon juice (about one to two teaspoons depending on your taste)
- 1 tablespoon of extra virgin olive oil
- A twig of basil
- Salt and pepper
1. Roughly chop the tomatoes, garlic and slices of bread
2. Mix all ingredients in a blender until a smooth bright red soup forms
3. Enjoy as it is or sprinkle some extra virgin olive oil on top
